Oat-Free Apple Crisp

Are you ready for the best healthy apple crisp recipe out there? I've been a huge fan of apple crisp since I was a child, and I've enjoyed many versions. This one remains my favorite due to its outstanding flavor (it tastes like an unhealthy recipe!). The fact that it's very simple to put together is an added bonus.

I used granulated monk fruit sweetener in this recipe. I didn’t use quite all of it to sprinkle over the apples, so I dumped what I had left to the sweetener measuring cup for the topping and then just added more monk fruit to fill it up. All in all, I added slightly less sweetener to both the topping and the apples, but I couldn't tell the difference.

The best sugar-free, oat-free apple crisp you'll ever taste.

Ingredients:
  • 5-6 apples
  • ½ cup monk fruit or other granulated sweetener
  • 1 tablespoon ground cinnamon
  • ½ cup apple cider or apple juice
  • 1 teaspoon vanilla extract
  • For the topping:
  • 1 cup flour of choice
  • 1 cup monk fruit or granulated sweetener
  • 1 stick cold butter (leave in wrapper)
    Equipment:
  • 8"x8" or 9"x9" square baking pan
  • Knife/cutting board/apple cutter
  • 1 cup glass measuring cup
  • Grater
  • Small bowl
Instructions:

  1. Preheat oven to 400 degrees.
  2. Wash, peel, core, and thinly slice the apples.
  3. In small bowl, mix cinnamon and sweetener. In the baking pan, add a single layer of the cinnamon mixture. Then place a layer of sliced apples on top of that. Continue layering cinnamon-sweetener with apples until the apples are gone and the pan is full. Cover the final layer of apples with more cinnamon mixture. (You may have extra. Save it and use it in the topping.)
  4. Measure the apple cider in a glass measuring cup. Add the vanilla to the measuring cup. Pour over the apple slices.
  5. For the topping, mix flour and sweetener (adding any leftover cinnamon mixture first) in a small bowl. Hold the butter by the wrapper and grate it into the bowl. Mix together with hands until mixture is crumbly.
  6. Sprinkle topping over apples. Bake for 25 minutes or until golden brown and bubbly.
