Cinnamon Roll Waffles

Today's recipe is a breakfast recipe. We like unique breakfast recipes! Although planning for every meal of the day is important, planning ahead for breakfast is especially crucial. After all, who enjoys waking up hungry only to be faced with an hour of breakfast cooking time in addition to the countless other normal morning tasks?

When I know ahead of time what I'm planning for breakfast, I'm able to either mix it up the night before or else mix it up earlier in the morning before my morning routine.



I recommend monkfruit sweetener for its smooth, sweet flavor with no aftertaste as well as for its non-existent effect on blood sugar.

Restful Kitchen's Review: This waffle recipe is delicious as well as a healthy morning treat. Instead of swirling in the cinnamon topping as the original recipe directs, we had it on top of the cooked waffles along with the icing. Our verdict? Much better that way!

These are very soft waffles - if you like a crispy waffle, you may want to try a different recipe. I’d still recommend the cinnamon swirl and the icing though! Add it on top of your favorite waffle recipe.



Cinnamon Roll Waffles - all the cinnamon goodness

The flavors of a cinnamon roll in a healthy waffle.

Waffle Ingredients:
  • 4 eggs
  • 1 cup cottage cheese
  • 4 ounces cream cheese, softened
  • 1/3 cup almond flour
  • 1/3 cup coconut flour
  • 1/3 cup ground flax
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder or soda
  • 1/3 cup granulated sweetener
Cinnamon Topping Ingredients:
Icing Ingredients:
Instructions:

  1. Blend cottage cheese until smooth. Add cream cheese; blend. Add remaining waffle ingredients and mix.
  2. Spoon into preheated waffle iron and cook until done.
  3. While waffles are cooking, mix Cinnamon Topping ingredients together.
  4. Beat icing ingredients together.
  5. Top waffles with cinnamon topping and icing. Enjoy!
