Banana Oat Breakfast Cookies

Which sounds like a more appealing breakfast: a bowl of oatmeal with bananas and coconut on top, or cookies?

If you said oatmeal, your recipe isn't here today, but if you, like me, would rather eat cookies for breakfast, this is what you're looking for. It's healthy, it's simple, it's quick, it's a delicious cookie - and the ingredients are basically the same as a fancy bowl of oatmeal!



A restful kitchen in the morning starts the night before. Do the dishes, sweep the floor, and prep the breakfast. However, if you're like me and don't always have time (or remember!) to prep breakfast the night before, these cookies can jumpstart your morning. Quick, healthy, and delicious food = happy family = restful kitchen.

I usually add shredded coconut to this recipe, but sometimes I've also added sugar-free chocolate chips. I also rotate between making these cookies with mostly almond butter with just a tiny bit of peanut butter, and mostly peanut butter with a tiny bit of almond butter.

I also like using parchment paper every time I use my baking sheet or cookie sheet. Clean up is so easy, and I don't have to use oil or butter on the pan, and I don't waste food because nothing ever sticks.

Cookies for breakfast! Why not? They're healthy.

Ingredients:
  • 2 cups oats
  • ¾ teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup nut butter
  • 2 ripe bananas
  • ¼ cup honey
  • ½ cup nuts, chocolate chips, or coconut
Instructions:

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  2. Mash bananas.
  3. Combine all ingredients in mixing bowl.
  4. Spoon onto baking sheet in round cookie shapes
  5. Bake for 15 minutes.
